BK Lean Ham and Egg cups (revised)

Introduction

Revised from HAWGWILD1's Lean Ham and Eggs recipe (which is great but I just needed it recalculated for spark)

Options: try chives, chopped bell pepper, mushrooms, whatever you like in an omelette.

Ingredients

    2 whole egg
    6 egg whites
    1/4 cup Fat Free Horizon Milk
    1 Tbsp bell pepper (red and green) diced
    1/4 cup (about 40 grams) cooked, chopped spinach
    Applegate Farms Uncured Organic Ham 6 oz
    2 Tbsp grated parmesan

Directions

Preheat oven to 350 degrees. In a bowl, scramble the egg, whites and milk together. Add thawed spinach. Stir.

Spray muffin tin with cooking spray. Line 8 of the cups with ham slices. Divide the egg mixture among the muffin cups and into the well created by the ham slices.

Place in oven for 20-25 minutes. Top with cheese and cook for another 5 minutes.
