Mediterranean Chicken

Number of Servings: 4

Ingredients

    1 TBS Extra Virgin Olive Oil
    1 tsp Extra Virgin Olive Oil
    1 medium red onion, sliced
    2 TBS capers, drained
    1 lb. cooked chicken breast, shredded (I used poached, but could be baked or sauteed)
    1 tsp dried oregano
    3 TBS fresh lemon juice (1/2 to 1 lemon)
    2 TBS fresh Italian flat leaf parsley
    Salt and Pepper to taste

Directions

Heat 1 TB of extra virgin olive oil over medium heat. Add red onion and saute approximately two minutes, just until soft. Add capers and lemon juice, heating approximately 30 seconds. Add cooked chicken, oregano, salt and pepper and stir. Heat chicken through, add last dash of olive oil and parsley, mix and serve. Serves 4
