Savory Lentil & Ham Soup

Introduction

This is one of the soup recipes I tried in my soup-a-week winter. I don't care much for lentils and found this a bit so-so, but if you like lentils, here is the soup for you. I lowered the sodium by using my own no salt added vegetable stock, but calculations are based on Swanson broth. I felt it could use more veggies and ham to the amount of lentils. Ingredients

    1 package (16 ounce) dried lentils (2 1/4 cups), sorted and rinsed
    2 cans (14.5 oz. each) vegetable broth
    1.5 cups diced ham or canadian bacon
    1 cup carrots, cut into 1/2 inch pieces
    1 cup potato, cut into 1/2 inch pieces
    1/2 cup onion, chopped
    1/2 cup celery, cut into 1/2 inch pices
    4 cups water
    1 teaspoon dried thyme leaves
    1/2 teaspoon salt
    1/4 teaspoon pepper

Directions

Mix all ingredients in 1 1/2 - 6 quart slow cooker

Cover and cook on low heat setting 8 - 9 hours or high heat setting 3 - 5 hours or until lentils are tender. Stir well before serving.

Yields approximately 8 1.5 cup servings.
