Bleu meatloaf burgers

Introduction

A nice combo of hamburgers and meatloaf, with a bit of blue cheese for the extra special oomph.

Extra hamburger patties freeze well and make a great weeknight meal- just remember to set it down to the fridge the night before to defrost.

Number of Servings: 10

Ingredients

    2 lb. of ground beef (preferably 85-90% lean)
    1 diced bell pepper
    1 diced yellow onion
    1 can of diced tomatoes
    1/4 cup of bleu cheese crumbles
    Dash of worcestershire sauce
    10 hamburger buns
    Salt and pepper to taste

Directions

* Add the diced onions to a pan with the juice from the can of tomatoes, salt and pepper and "sweat" the onions until they are cooked down and almost translucent.
* Mix together the hamburger meat, peppers, sauteed onions, bread crumbs, tomatoes, worcestershire sauce, salt and pepper thoroughly, but mix it no more than necessary to get it combined completely. Over-mixing can result in dry burgers.
* Shape mixture into 10 equal sized patties.
* If you don't want to cook them all now, wrap each patty in waxed paper and then put into freezer bag for later use.
* Grill on a George Foreman set to 425 deg. F for approximately 10 minutes or until cooked to desired doneness (ground beef should generally be cooked until well done).
* Top with about 1/2 teaspoon of bleu cheese each and allow to sit on the hot grill until slightly melted and ready to serve- but don't close the lid!
