Cock-A-Leekie Soup

Ingredients

    Cock-A-Leekie Soup

    4 to 6 chicken breast tenderloins (6 oz)
    2 tablespoons olive oil
    1 bunch (2 to 3) leeks
    3 carrots, shredded, or 1 package of carrot matchsticks
    1-48 oz. can of low-sodium chicken broth
    Salt and pepper to taste

Directions

In a large soup pot, brown the chicken in the olive oil. Slice the leeks and clean them thoroughly. Once the chicken is done, remove from the pot and put to the side. Put the carrots in the pot and sauté until they are bright orange. Add the leeks to the pot with the carrots. Cook with the carrots for a few minutes, until the leeks turn bright green. Add the chicken broth, bring to a boil. Turn down to simmer for 20 minutes. Cut the chicken into small pieces. Add chicken to the soup, and simmer 10 minutes more. Add salt and pepper to taste.

Makes 6 1 1/2-cup servings
