Number of Servings: 6
Ingredients

1egg white
6 Tbsp sugar, divided
3 Tsp Minute tapioca
2 cups whole milk
1 egg yolk
1 Tsb vanilla
Directions
Beat egg white in medium bowl w/ electric mixer on high speed until foamy. Gradually add 3 Tsp sugar, beating until soft peaks form.
Mix tapioca, remaining 3 Tsp sugar, milk & egg yolk in medium saucepan.
Let stand 5 minutes.
Cook on medium heat, stirring constantly until mixture comes to a full boil.
Remove from heat. Quickly fold in egg white mixture until well blended, trying not to break down the fluffy egg whites too much...
Stir in vanilla.
Cool 20 minutes. Serve warm or chilled makes 6 servings
