Soft and Hard Chicken Taco Meat

Ingredients

1 lb boneless skinless chicken breast
1 tsp Cumin
3 tbsp Chili Powder
1 tsp Garlic Powder
1 tsp Onion Powder
3 tbsp Olive Oil
1 can Rotel diced tomatoes and chilies or plain diced tomatoes
2 C chicken broth
Directions
- In four qt pan add chicken breasts. Salt, cover with water, bring to boil, loosely cover. Cook over medium to low heat for 1 hour, drain, saving broth. Set chicken aside to cool.
- When cooled, take and cut in strips 1/4 by 1 inch or shredded would be even better.
- In same pot add oil and heat. Add chicken cooking 3 or 4 more minutes.
- In blender add canned tomatoes (Rotel), chili powder, garlic, onion power, and cumin. Pour mixture into pan along with 2 cups chicken broth. Bring to boil, cover and simmer over medium heat about 15 to 20 minutes.
