Ingredients

Cocoa, dry powder, unsweetened, 1/4 c. and 1 tbsp
*Organic Sucanat, 1/3 cup
Olive Oil, 3 tbsp
Musselmans Unsweetened Applesauce (Tbsp), 3 tbsp
Country Creek Farms Egg Whites, 3
Gold Medal Whole Wheat Flour, 1/2 cup
Vanilla Extract, 1 tsp
Directions
Preheat over to 400 degrees. Spray small custard or ramekin cups with cooking oil.
In a medium bowl, combine cocoa powder with sucanat and whisk together. Whisk in applesauce and olive oil.
In a separate bowl, whisk gently the egg whites. Then slowly combine with the cocoa powder mixture, whisking until smooth.
Stir in flour and vanilla, until flour is combined completely but do not overmix. Divide mixture evenly into cups, place on baking rake (may want to use a sheet) and bake for 9 minutes.
Centers should be soft, but sides firm. Invert cups onto serving plates. Let stand for a few minutes before removing cups.
Garnish with fresh slices of pears or apples (not calculated).
This makes a rather dramatic little cake and would be great for a dinner party. Could decorate the top with a bit of confectioners' sugar. Taste is very dark and a bit bitter, so it cries for ice cream (heehee) or some fresh raspberries.
