Ham, Mushroom, & Cheese Frittata Cups

Introduction

These Frittata Cups are great to make ahead and microwave for breakfast at work. These Frittata Cups are great to make ahead and microwave for breakfast at work.
Number of Servings: 3

Ingredients

    6 eggs
    4 oz Hillshire Farms Honey Ham, diced
    1 cup diced fresh mushrooms
    3/4 cup Kraft Shredded 2% Mexican Four Cheese Blend

Directions

- Preheat the oven to 350 degrees and fill a 12-muffin tin with foil muffin cups
- Whisk the eggs until they are fluffy and mix in the cheese
- Distribute the ham and mushrooms into the 12 muffin cups
- Pour the egg and cheese mixture evenly into the 12 cups
- Bake at 350 for 18 minutes or until lightly browned and a knife inserted comes out clean.

Serving size is 4 Frittata Cups

  • Wowie. Zowie. I only made two adjustments, though I think it would have been amazing as is. I substituted 2 servings of Egg Beaters for 2 of the eggs, and I added some onion flakes. Yummy. I even served this at a luncheon! Eggs for lunch. Yow. - 5/18/10
