Penne Basil Chicken For One



Introduction

This lite little pasta dish is low sodium and low cholesterol but full of flavor. I don't use salt because the cheese has salt in it, but you certainly could add if you aren't on a sodium restricted diet. The garlic and fresh basil add great flavors so no need for lots of spices. The olive oil and the juice from the tomatoes and the cheese combine to create a sauciness so no need for additional sauce. Ingredients

    1 serving Active Lifestyle Penne Rigate Pasta
    2 ounces boneless, skinless chicken breast, cut into small pieces
    1/4 cup cherry tomatoes, cut in half
    1 tsp. finely chopped fresh garlic
    1 tbsp. Extra Virgin Olive Oil
    3 or 4 large leaves fresh basil,chopped chiffonade style
    Pinch white pepper (can use black)

Directions

Cook Pasta per the package instructions and set aside. Saute the chicken and garlic in the olive oil over medium heat until the chicken is cooked through. Add the tomatoes and basil and saute another minute, add the pasta and stir another minute, then add the parmesan cheese and pepper and stir over low heat until the cheese begins to melt . Serve immediately. Makes one serving.
