1 lb ground beef, lean
1 packet Taco Seasoning, less sodium
1/4 cup water
8 - 10" flour tortillas
1.5 cups shredded cheddar cheese
1 cup Salsa
Cook ground beef until brown, drain
Add seasoning packet, 1/4c water and cup of salsa. Simmer on low until all the flavors blend together
Lay 4 of the tortillas in the bottom of a 13X9 in glass pan. Spread 1/2c cheese on top of tortillas, then place half of the beef mixture on top. Spread another 1/2c cheese on top of the beef. Lay the other 4 tortillas on top of that and then the rest of the beef mixture and top with last 1/2c of cheese. Bake at 350 until all the cheese melts. Cut into 8 wedges. Can be served with sour cream, but will add more fat to the recipe.
