Eddie's Spicy Chicken Soup

Introduction

Ingredients

    8 oz. chicken, skin removed
    2 medium squash (chayote)
    1 cup zucchini
    2 raw medium onions
    2 cloves garlic
    4 cups carrots, sliced
    2 medium potatoes, russet
    1 cup roma tomatoes, diced
    1 cup celery, diced
    1 tbsp basil
    1 tsp oregano
    2 tbsp low sodium soy sauce
    2 tbsp honey
    pinch of dried dill weed
    1 tsp bay leaves (app. 7 leaves)
    2 tbsp ketchup
    pinch of crushed red pepper

Directions

Boil chicken stock (in sufficient water in 3 qt. saucepan) until bones fall apart, strain. Separate chicken meat. Cool chicken stock, separate fat layer on top. Return meat to stock and add additional ingredients. Bring to a boil then simmer for a couple of hours, until veggies are soft but still firm. Makes 12 1-cup servings.
