Pineapple Pork Chops

Introduction

This is a version of VBMOM2010's Grilled Chicken with Pineapple. I changed it to utilize pork chops and cooked it in a skillet on the stove instead of grilling. I'm sure it would be delicious on the grill too!

This is a version of VBMOM2010's Grilled Chicken with Pineapple. I changed it to utilize pork chops and cooked it in a skillet on the stove instead of grilling. I'm sure it would be delicious on the grill too!

Number of Servings: 4

Ingredients

    1 Can sliced pineapple (no sugar added)
    1/4 cup low sodium soy sauce
    2 Tbsp honey
    2 Tbsp cider vinegar
    2 cloves garlic, minced
    1 teaspoon ginger powder
    1/4 teaspoon cayenne pepper
    4 - 6oz bone-in center cut pork chops
    approx. 1 tsp cornstarch for thickening sauce

Directions

In a blender, puree pineapple chunks until smooth. Combine pineapple & juice, vinegar, soy sauce, honey and spices in large bowl or ziploc bag.
Pierce pork with a knife or fork.
Add pork to ziploc and marinate 1 hour (or longer)
Remove pork and place in a hot skillet, turning to brown on each side.
Pour marinade over pork.
Cover skillet and simmer, turning pork several times.
Cook for 20 minutes or until cooked through.
Remove pork from pan and keep warm.
Over medium-high heat, bring marinade to boil.
Add 1 tsp cornstarch (or more, as needed) to marinade, stirring to blend.
When sauce is thickened, serve over pork chops.
