Banana Bread

Introduction

Uses whole wheat flour for extra fiber! Uses whole wheat flour for extra fiber!
Number of Servings: 16

Ingredients

    1 1/2 cups whole wheat flour
    1 1/4 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp ground cinnamon
    1/8 tsp salt
    2 slightly beaten egg whites
    2 medium bananas, mashed
    3/4 cup sugar
    1/4 cup cooking oil

Directions

In a medium bowl, stir together the flour, baking powder, baking soda, cinnamon and salt.

In a large bowl, stir together the egg whites, banana, sugar and oil.

Add the dry mixture to the banana mixture and stir until just moistened.

Spray an 8" x 4" x 2" loaf pan and spread batter in it. Bake at 350 for 45 to 50 minutes.

Makes 16 servings
