2 egg substitutes
1 1/4 cup Soy Milk
Gluten free flour (with Xanthan gum)
1 Tb olive oil
A pinch of salt
Whisk the egg substitute and soya milk together.#
Stir in the flour mixture. whisk until smooth.
Add the olive oil, vanilla and pinch of salt. Whisk well.
The batter should be the consistency of thin cream. If it’s too thick, slowly add more milk, if too thin, add flour, as needed.
Cook on a high heat, just wiping oil onto the frying pan with kitchen paper.
