Red leaf lettuce (or another dark leaf) 2cups
Blue cheese (from the block) 1/2 oz
Dried Cranberries 2 tbsp
Pecan halves 1/2 oz
Apple 1/2 c chopped
Grilled chicken breast (skinless) 3oz
Sprinkle the dried cranberries, chopped apple chopped pecans, and crumbled blue cheese on top (if you freeze the cheese you can grate it over the salad if you prefer).
Cut the chicken into slices or cubes and place on top of the salad (the chicken can be served hot or cold).
Add any dressing you like or eat it without - just make sure you add the dressing to your tracker.
