Introduction

Ingredients

    All ingredients should be fresh:
    1 Medium red sweet pepper
    1 Medium green sweet pepper
    1 Large summer squash
    1 Large onion
    3 Medium red ripe tomatoes
    1 clove of garlic
    1 Medium eggplant
    Olive oil, just for cooking

Directions

Make little cubes of all the vegetables, just slicing them, unpeeled. They should be fried with a little bit of olive oil. Each one has different cooking-times so cooking them separately would be a good choice. However, if you want to cook them all at the same time it'll be ok.
It's a perfect with fried chicken or fish, regardless it could be eaten as kind of salad.
Just put all the fried cubes in a plate or bowl and serve them :-)
