.4 cup of small pearl tapioca
2.5 cups 2% milk
2 eggs, separated
3 tbsp brown sugar
1 tbsp white sugar
1/4 tsp sugar
1 tsp vanilla
Add a few spoonfuls of hot mixture to beaten egg yolks to equalize temperatures, and then mix in yolk mixture to pot, stirring while it thickens. Remove from heat and add vanilla. Stir.
Beat egg whites until soft peaks and fold into tapioca mixture. Makes 4 servings. Serve hot, warm or cold.
