Banana Bread w/ Coconut Oil

Introduction

Number of Servings: 4

Ingredients

    * Egg, fresh, 1 jumbo (remove)
    * Wheat flour, white, bread, enriched, .75 cup (remove)
    * Baking Soda, 1.5 tsp (remove)
    * Baking Powder, 1.5 tsp (remove)
    * Granulated Sugar, .125 cup (remove)
    * Buttermilk, .5 cup (remove)
    * Banana, fresh, 2 small (6" to 6-7/8" long) (remove)
    * Coconut Oil, 3 tbsp (remove)

Directions

Mash bananas, cream coconut oil with bananas until fairly smooth (can't avoid some lumps). Add egg and buttermilk & mix. Whisk or sift flour, baking soda and baking powder together and add to wet ingredients until thoroughly incorporated. Pour into greased loaf or brownie pan. Sprinkle top with granulated sugar to cover lightly. Bake in 350 degree oven for 30-35 mins or until set. Makes 4 large pieces.
