Introduction

This was our healthier Alternative to the beef stew I make using beef and potatoes instead of pork and cabbage. The tapioca pudding helps to make a nice thick gravy. Number of Servings: 12

Ingredients

    2 cups green beans
    2 cups raw baby carrots or diced
    1 cup raw onions
    1 medium head of cabbage chopped
    .25 cups of dry tapioca pudding
    1 large can or 3 cups diced tomatoes
    2lbs pork stew meat chopped
    Salt and Pepper to your own flavor

Directions

Mix everything together and place covered in the oven for about 6 hours on low setting 275 degrees. This makes meat very tender. You can also use a slow cooker.

Makes approx.12 - 1 cup servings
