Annie's Mediterranean Pasta

Ingredients

    1 Tbsp olive oil
    Tbsp butter
    1 medium red onion
    6 cloves garlic
    1 yellow bell pepper
    jar of TJs kalamata olives (apporx cup sliced)
    1 small jar of artichoke hearts marinated in oil
    cup sundried tomatoes (dry, not packed in oil)
    1 package sliced crimini mushrooms from Trader Joes
    cup fresh spinach
    1 Tbsp dried basil
    tsp crushed red pepper
    tsp kosher salt
    1 box Barilla whole grain penne pasta

    Topped with:
    Tbsp pine nuts
    1 Tbsp fat free feta cheese (from TJs)

    Makes 8 servings

Directions

Boil pasta until firmess desired

Saute all other ingredients (excluding pine nuts
and fat free feta cheese)

Serve and top with Tbsp pine nuts and 1 Tbsp fat free feta cheese
