1/4 cup oatmeal
1/8 cup egg white or egg substitute
2 tsp brown sugar
2 tsp flour
1/4 tsp vanilla
1/4 tsp baking powder
1 T raisins
cinnamon to taste
Can change it up by switching out raisins for craisins or dried cherries and adding almonds or walnuts and use almond flavoring.
This make 1 large cookie.
I found this receipe on a sparkblog which was called Carrots N Cake. I came up with the variations as raisins are not my favorite.
