Apple Chicken Salad

Introduction

This recipe has been a big hit whenever I have served it. This recipe has been a big hit whenever I have served it.
Number of Servings: 8

Ingredients

    12 oz chicken breast, cooked and diced
    1 medium Fuji or Gala apple, diced
    1 Tbsp lemon juice
    2 ribs celery, diced
    1/2 small red onion, diced
    1/4 C Craisins
    1/4 C pecans
    1 C Hellmann's light mayonnaise
    2 Tbsp dijon mustard

Tips

Slivered almonds may be substituted for the pecans.


Directions

In a medium-sized bowl, pour lemon juice over diced apple. Toss to coat. Add diced chicken, celery, and onion to apple. Add pecans and Craisins. In a small bowl, combine mayo and mustard. Pour over salad ingredients, stirring to combine thoroughly.

Serving size = 1/2 cup.

Serve in pita pockets, wrapped in flat bread, on crackers, or on whole wheat bread. Not included in calorie count.
