Chicken and Vegetable Stir-Fry

Introduction

Chicken marinated in a ginger-soy-wine sauce tops this tasty vegetable dish. Chicken marinated in a ginger-soy-wine sauce tops this tasty vegetable dish.

Ingredients

    • 2 tablespoons dry red wine
    • 1 tablespoon soy sauce
    • 1/2 teaspoon sugar
    • 1 1/2 teaspoons grated, peeled ginger root
    • 1 pound boneless, skinless chicken breast, cut into 1 1/2 inch strips
    • 2 tablespoons olive oil
    • 2 medium onions, each cut into 8 wedges
    • 1/2 pound fresh mushrooms, rinsed, trimmed and sliced
    • 2 stalks celery, cut into 1/4" slices
    • 2 small green peppers cut into thin lengthwise strips
    • 1 cup water chestnuts, drained and sliced
    • 1 tablespoon olive oil
    • 2 tablespoons cornstarch
    • 1/4 cup water

Directions

1. Prepare marinade mixing together wine, soy sauce, sugar, and ginger. Marinate meat in mixture while preparing vegetables.



2. Heat 1 tablespoon oil in large skillet or wok. Stir-fry onions and mushrooms 4 minutes over medium-high heat.



3. Add celery and cook 1 more minute. Add remaining vegetables and cook 2 minutes or until green pepper is tender crisp. Transfer vegetables to warm bowl.



4. Add remaining 1 tablespoon oil to skillet.



5. Stir-fry meat in oil about 2 minutes or until meat loses its pink color.



6. Blend cornstarch and water. Stir into meat. Cook and stir until thickened.



7. Return vegetables to skillet; stir gently and serve.



Makes 6 servings.

    Very Tasty. I don't like Mushrooms so added Bean sprouts , broccoli, cauliflower , and Carrots. Putting this over Brown Rice its Wonderful. Adding a Salad makes for a great supper.

    I make similiar stir fry and this was just as tasty. I added additional veggies (bok choy and snow peas this time) and served with brown rice. Delish! - 6/6/08

    GREAT stir fry recipe. I omitted the celery and added broccoli, sugar snaps, and red, orange, and yellow pepers. A terrific and tasty way to get in some servings of veggies. I'll definitely make this again. - 7/4/07

    OMG my husband and I will be making this again. We used cooking wine and I don't like ginger so we used garlic minced and baby carrots instead of green peppers. This was so good we are cooking it again this week. Thanks - 1/22/10

    Wonderful recipe! We had the green peppers, carrots, and broccoli- next time we hope to add in some baby corn and snow peas. Extremely filling and wonderful with the brown rice. Thank you for sharing with us! - 1/18/10

    I have not tried the recipe yet but wanted you to know that the calories are miscalculated. Each serving should have 70 more calories. because you did not enter the correct amount of chicken...1 lb of chicken has about 500 calories...divided into 6 portions would be about 83 calories a serving. - 9/29/10

    This was so simple to make and it turned out delcious. The only thing i left out was the celery b/c my husband doesn't really like it. Next time I would add some red pepper for some nicer coloring. - 6/25/08

    I've usually made my stir-fries with rice wine, but this version with red wine sounds very good. I'll probably try it this weekend, with the addition of another vegetable, maybe asparagus. - 6/6/08

    Liked this as base recipe but used what we had on hand. We like food a little zippier so added red pepper flakes, used bag of Kroger Stir-Fry vegetables, added broccoli, slivered carrots, fresh from the garden red bell pepper and red jalapeno. Liked it! - 11/12/10

    This sounds quick and easy. I love chinese food, so I can't wait to make this one! I do think I will add some other vegs to it though... broccoli, carrots, snap peas, etc... - 6/6/08

    I have tried making many a stir fry recipe and it always comes out horrible. Not this one though! The directions were easy and it tasted delicious. Instead of mushrooms we added a can of baby corn (drained). Served with some brown rice for added fiber. Definitely will be making again! - 5/8/08

    This was one of the BEST dishes I've ever made! I doubled the marinade & let the chicken sit for about 1/2 hour...delish! Next time I'd add some additional veggies & double the water chestnuts because they're my fave. MAKE THIS DISH! It's low cal & very filling! LOVE IT!!!! - 2/10/08

  • This was delicious! I don't like mushrooms so substituted with red, orange and yellow peppers. I didn't have water chestnuts and just added more peppers. I added about an extra 1/3 cup more liquid at the end (no salt chicken broth). I will be making this again. My fussy husband even liked it. - 1/9/13

  • I used fresh organic bok choy, garlic, and a medley of organic frozen stirfry veggies. For protein I used chicken that was freshly butchered on Sunday. I skipped the cornstarch and soy sauce but used coconut aminos in place of the soy sauce. I also used kelp noodles instead of rice. It was awesome!! - 6/29/11

  • Tasty. If you cook the onions on their own for a couple of minutes they'll keep their flavour better because the liquid released by the mushrooms tends to make the onions stew. - 4/22/09
