scalloped potatoes with swiss and cheddar cheese

Ingredients

9 medium to large potatoes , scalloped
2 cups fat-free half and half
salt 2 tsp
black pepper 1 tsp
butter, unsalted, 1/2 tbsp
swiss cheese, grated, 12 oz.
Directions
lightly grease an 11x9x2 pan with cooking spray or butter, set aside
in saucepan place the half and half and bring to a simmer over medium-high heat. Add salt and pepper, stir well. add potatoes, adding more half and half if you feel it needs it to cover the potatoes slightly. Lower to medium low and simmer til they are fork-tender, about 10 to 12 minutes; remove from heat.
with spoon, transfer to the baking dish 1/2 of the potatoes with some of the half and half. Even spread it to form the first layer, then adding 1/2 of the swiss cheese. Repeat the layering process and top with the rest of the cheese. Add now the cheddar just to add some color. Bake at 400 degrees F. for 30 minutes or until brown and bubbly.
