Southwestern White Chili

Introduction

This is a light soup for summer or a great warmer-upper for winter. This is a light soup for summer or a great warmer-upper for winter.
Number of Servings: 8

Ingredients

    1 lb chicken breast
    2 Tbsp olive oil
    1 small onion, chopped
    32 oz Swanson chicken broth, reduced sodium
    2, 4oz cans of chopped green chilies
    2 tsp garlic powder or 2 garlic cloves
    2 tsp cumin
    1/4 to 1/2 tsp ground red or cayenne pepper
    1 tsp oregano, dried
    1 tsp cilantro, dried
    2, 19 oz cans white kidney or Great Northern white beans, undrained

Directions

Braise the chicken in oil. Remove from the pan.

Saute the onion and garlic (if using fresh) in pan that was used for the chicken. Once the onions begin to clarify, stir in broth, chilies, cumin, pepper, oregano, and cilantro. Reduce heat to simmer.

Meanwhile, dice chicken in small pieces.

Add chicken and beans to broth once it has simmered for 30 minutes. Allow to simmer 10 minutes more.

Serving size is approximately 1 1/2 cups.

Ladle soup into bowl. You may top with shredded cheese or chopped green onions. Not included in calorie count.
