Pumpkin Bread

Introduction

Inspired by the recipe submitted by another member, I lowered the fat content by using applesauce, instead. Inspired by the recipe submitted by another member, I lowered the fat content by using applesauce, instead.
Number of Servings: 19

Ingredients

    3/4 C granulated sugar
    3/4 C Splenda for Baking
    1 C unsweetened applesauce
    2/3 C water
    23 oz pumpkin
    3 1/2 C whole wheat flour
    1 tsp salt
    2 tsp baking soda
    1 tsp baking powder
    2 tsp pumpkin pie spice
    1/2 tsp ground cloves

Directions

Combine sugar, Splenda, and other wet ingredients in a large bowl. In a small bowl, combine dry ingredients. Gradually, add dry ingredients to wet ingredients until thoroughly combined. Do not over-stir.

Pour mixture into 2 loaf pans. Bake 40 to 60 minutes at 350 degrees. Loaves are done when a toothpick inserted in the middle comes out clean.

Remove from oven and let set for 10 minutes before turning onto a rack to cool.

You may wish to use this batter to make mini loaves or muffins. Baking time will vary with the size of the breads.

You may also add pecans or walnuts to the batter before baking, but calorie count does not reflect this addition.

One serving = 3 oz.
