Health-nut Brownies (Full Plate Diet)

Ingredients

    3 Tbl canola oil
    1/4 cup water
    1 tsp vanilla extract
    1/8 tsp salt
    1 - 15 oz can regular sodium canned black beans, rinsed
    3/4 tsp baking powder
    3/4 cup & 2 tablespoons sugar
    1/3 cup cocoa powder
    1/2 cup whole wheat flour

Directions

preheat oven to 350. Lightly spray 8x8 baking dish.

Put the oil, water, vanilla, salt, & beans in a blender and blend until creamy, about 1 minute.

Add the baking powder, sugar, and cocoa powder and blend until creamy, about 45 seconds. Because the mixture will be thick, you will have to stop the blender a couple times, stir the contents, and continue blending to get a creamy consistency.

Lastly, add the flour and blend until creamy, about 45 seconds, again stopping the blender to stir.

Put batter in sprayed baking dish and spread until even.

Bake 40 minutes. Cool completely before cutting into 9 pieces.
