Italian Soup Zuppa Tuscana

Introduction

If you've ever had the soup at Olive Garden, my girlfriends grandmother figured it out. This is amazing!
You're friends and family will be raving and wanting more!
This soup is great as a meal.

Number of Servings: 12

Ingredients

    *Potato, raw, 8 medium
    Half and Half Cream, 1 pint
    Celery, raw, 1 cup, diced
    Kale, 8 cup, chopped
    Chicken Broth, 2 cup
    *Ground Sausage, Italian, 2-3 packages
    *2 beef boullion cube
    Onions, raw, 1 cup, chopped
    Garlic, 2 tsp
    Parmesan Cheese, grated, 1 cup

I usually use 2 packages of Itialian Sausage, plus 1 package of hot Italian Sausage, cook that first then drain, add garlic, onion, plus celery ( the amount just depends on how much you like, personally I usually use 1 onion, 3 pieces of celrey, & a few spoonfuls of minced garlic), cook all of that together, then add your chicken broth, I usually add about 4 cans of it & then add 2 more cups with bouillion cubes or other makings I have for that, then I usually use 6- 8 potatoes sliced real thin, wait for those to be tender enough to eat, then I add a pint of Half & Half, & then top with kale, my family loves the kale so I usually use a lot of that, you can find it bagged & washed for you, ( how wonderful) or you can wash it & do yourself (it's cheaper that way), so whatever is most important saving time or money.
This recipe completely fills up a 6 qt pot, (from Princess House), anyway if you have leftovers I usually add more kale the next day too, I also serve it w/ Parmesan Cheese, shredded on top. For those that don't need to watch what they are eating, this is great with garlic bread.
