Crock Pot Cheddar Potato Soup

Introduction

I tried to come up with a healthier version of my favorite baked potato soup- this is as close as I have been able to get to those I have found in restaurants.

Number of Servings: 8

Ingredients

    1/2 cup Cabot Vermont 50% Light Cheddar Cheese
    4 cups Chicken Broth
    Potato, raw, 6 medium, peeled and cubed
    1/2 onion chopped
    Water 1 cup
    Applegate Farms Sunday Bacon 2 slices,
    Thyme, ground, 1 tbsp
    Celery Salt, .5 tsp
    Carrots, raw, 3 medium, chopped
    Pepper, black, 1 tsp

Directions

Place chopped potatoes, onion, and carrots in crock pot.
Cover with chicken broth and water
Add spices and stir to combine
Cover and set crock pot to cook for 6 hours
About 5 hours in put cheese in and stir to combine
Cook bacon on stove until done, chop and add to soup
Stir to combine
When cooking is done, transfer to blender (or use immersion blender) to puree to desired consistency (I enjoy mine on the thicker side)
Return to crock pot to stay warm
**May add extra water if too thick

Makes 8 1-cup servings
