Pork Tenderloin with vegetables in spicy peanut sauce


Number of Servings: 8


    1 1/2 pounds pork tenderloin, cut into cubes
    3/4 cup baby carrots, chopped
    1 cup red onion, diced
    7 cloves garlic, minced
    1/2 tsp paprika
    1/2 tsp ground cumin
    1 tsp hot curry powder
    1/2 tsp cayenne pepper
    1/2 tsp white pepper
    1 tbsp crushed red pepper flakes
    1/2 tsp ground ginger
    3/4 cup reduced-fat peanut butter
    3/4 cup reduced fat coconut milk
    200 grams broccoli, in florets
    300 grams mushrooms,halved


In a large skillet heat oil over medium-high heat until shimmering. Add onions and cook until translucent. Add garlic and cook until fragrant, about 30 seconds. Add cubed pork and cook until well-browned. Add spices and stir to coat well. Stir in peanut butter, coconut milk and broth and mix well. Add mushrooms, carrots and broccoli and stir to thoroughly coat in peanut sauce. Reduce heat, cover and simmer about 30 minutes.
