Introduction

OK. These are definitely restaurant quality if made correctly. I perfected them while I was pregnant. I constantly craved Mexican food and made these once a week. OK. These are definitely restaurant quality if made correctly. I perfected them while I was pregnant. I constantly craved Mexican food and made these once a week.
Number of Servings: 4

Ingredients

    1 Boneless, Skinless Chicken Breast
    2 Green Bell Peppers
    1 Small Onion
    2 T olive oil
    dash of hot sauce (optional- makes it spicy)
    pinch of salt
    pinch of pepper

Directions

Drizzle 2 tablespoons of olive oil in a deep 12 inch pan. Turn burner on HIGH.

Cut chicken up into 1 inch cubes, place in pan. Hollow out and rinse bell peppers. Cut in half, flip to flat side and slice 3/4 inch slices long ways to make strips, place in pan. Add Hot Sauce, salt/pepper to taste (Careful with the chili powder and red pepper- it gets hot really fast). Mix well with spoon. Allow the oil to cook up and let the ingredients scorch a bit (avoid over-stirring to achieve this). Once the peppers are starting to loosen up a bit, drain the mushrooms well using the top of the can lid to press down on them and squeeze juice out, add to pan. Cut up onion, separate layers, add to pan. Cook until onions have caramelized.

Serve on warm Whole Wheat Tortillas or brown rice (neither included in the calories).
