Beef Stroganoff

Introduction

Number of Servings: 6

Ingredients

    1.5 lbs. steak
    2 tbsp. olive oil
    2 tbsp. butter
    1 med. onion
    1 large package of mushrooms sliced
    1 cup of frozen peas
    1 can of beef broth (I used reduced sodium)
    1 can of cream of mushroom (Healthy Choice version)
    1 cup of reduced fat sour cream

Directions

Before doing anything cut up the steak to bite size peices along with the onion and mushrooms.
In a large skillet heat olive oil and butter in the pan.
Then brown the steak til it's no longer pink.
Take out the steak, leaving the drippings in the pan.
Then add the onions and mushrooms to the pan til the mushrooms are done and the onions are translucent.
Then add the frozen peas to heat them up.
Then add the flour at this point.
When mixed together add the beef broth and cream of mushroom soup.
Then add the steak back into the pan.
After the sauce has thickened take the skillet off the heat.
Then finally add the sour cream.

This makes 6 servings (Unfortunately I didn't measure sorry)

It tastes great served with egg noodles and a salad!
