Peanut butter meringue cookies

Introduction

Tiny yummy peanut buttery cookies very low in unsaturated fat and high in the good fats!! :). Make sure you use all-natural, non-hydrogenated peanut butter!! (like Teddy) Tiny yummy peanut buttery cookies very low in unsaturated fat and high in the good fats!! :). Make sure you use all-natural, non-hydrogenated peanut butter!! (like Teddy)
Number of Servings: 37

Ingredients

    4 egg whites
    2 cups non-hydrogenated peanut butter (teddy works well)
    1 cup maple syrup or 1 1/2 cups sugar

Directions

Beat egg whites until stiff. Mix peanut butter and syrup fold into eggs and drop by teaspoonful onto sprayed cookie sheet. Flatten with fork. Bake at 325 degrees for 20 minutes.

Makes about 37 cookies
