Introduction

The recipe calls for 2 lbs cod but due to loss of water when cooked I entered 24 oz instead of 32 oz into ingredient list for nutrition. I use the generalization that 4 oz of raw equals 3 oz cooked. Ingredients

    2 med onions, sliced
    1 small green pepper, cut in strips
    1 small red pepper, cut in strips
    1 tbsp extra virgin olive oil
    2 med tomatoes, cut into thin wedges
    3 cloves garlic, minced
    2 lbs. cod fish (firm fish)
    75 g light feta, crumbled
    Parsley
    Salt and pepper to taste

Directions

Preheat oven to 400 degrees F.
Cook and stir onions and peppers in oil in a large frypan on med-high heat about 5 minutes, or until tender-crisp. Add tomatoes and garlic, mix lightly. Turn heat off.
Arrange fish in a single layer in 13x9-inch baking dish. Spoon veggie mixture over fish. Sprinkle with cheese.
Bake 25 minutes or until fish flakes easily. Sprinkle with parsley. Season with salt and pepper.
Serves 6.
