Heart Healthy Chicken/Veggie Quesadillas

I picked up on this when I was in the hospital for open heart surgery. Talked with the dietician and this my version with veggies and less cheese. Ingredients

Toufayan pitettes Multi grain
Diced canned tomatoes no salt added
1 lbs fresh chicken breast tenders
Great Value (Walmart Brand) Sugar Sanp Stir fry (or your choice)
Mrs. Dash Italian Syle Blend
Directions
Spray pan with olive oil spray and brown 1 lb of chicken tenders
Add full pkge 12 oz of stir fry veggies
Add full cann (partially drained) of tomatoes
sprinkle with the Mrs. Dash for wonderful flavor
Cover and simmer until chicken is tender and veggies are just under crisp.
Cut Chick and veggies with spoon (small pieces)
Split 4 of the Pitettes, using thicker side for bottom
Using slotted spoon spread slightly cooled mixture on fat half of pitettes. Extra veg can be split and reserved to eat
separately.
Sprinkle 1 oz (or more if you like I use little) over the top of mixture. cover with top of pitette. Lighty spread top with margarine and grill 3 to 5 minutes in hot toaster over or under oven broiler.
This makes a colorful dish and you can divide veggies on the side. As it is messy I eat with by cutting with a sharp knive and fork.
