Green Rice

Introduction

Yummy! Very easy dish to make. Use up any leftover rice you have. This is a dish that we make on St. Patrick's day because of it's green color. Yummy! Very easy dish to make. Use up any leftover rice you have. This is a dish that we make on St. Patrick's day because of it's green color.
Number of Servings: 6

Ingredients

    1 c. brown rice cooked in 2-2.5 cups water
    1 cup grated cheddar cheese
    1 cup milk
    3 eggs beaten
    1/4 cup light butter
    1 green pepper chopped
    1 onion chopped
    1 tsp. salt
    1tsp. dried parsley (for color)

Directions

Cook rice and let it cool or use leftover rice. Mix all ingredients together. Spray 9x9 pan pour ingredients into dish and cover with tin foil. Bake at 375 for 45 min-1 hour or until egg/ milk mixture is cooked. (like quiche) Make sure it does not get crispy.
