Wednesday spinach soup

Ingredients

    1/2 cup chopped onion
    1 garlic clove, chopped
    1 fl oz sherry
    5 cups fresh spinach
    handful fresh basil leaves
    2 cups broth
    1/4 tsp nutmeg
    1 cup 2% milk
    S &P P to taste

Directions

Fry onion in non-stick spray or a bit of broth. Add garlic when onion is transluscent. Add sherry, simmer until liquid reduces and smells less boozy. Add broth and spinach, basil and nutmeg. Simmer 15 minutes. Add s & p to taste then blend to desired consistency with blender or immersion stick. Let cool slightly before stirring in milk. Warm to serving temperature without causing milk to separate.
