Introduction

The pinto beans in this recipe are cooked ahead, from 1/2 pound of dry beans, which were soaked overnight then cooked for 2 hours. This cooking time is not inculded for this recipe.

Number of Servings: 8

Ingredients

    1 lb extra lean ground beef
    2 cans diced tomatoes, no salt added
    16 oz low sodium V8 Vegetable Juice
    4 c cooked pinto beans- yield from 2 c dry
    1 med onion diced
    2 t chopped garlic
    2 T chili powder
    1 T cumin
    1/2 t crushed red pepper flakes (optional)


Directions

Pour oil into 4 qt dutch oven on medium heat. Add onions and cook till soft.

Add ground beef, cook till just browned.

Add garlic and spices, mix well

stir in tomatoes, V8, and beans.

reduce heat to low, add lid and simmer for 30 min. stirring occasionally.

makes 8, 1 cup servings

If desired top with 1T shredded cheese. (not calculated)
