Creamsicle Cheesecake

Ingredients

    1 pkg of sugar free jello (orange)
    1 250 g tub of 95% fat free cream cheese
    1/2 (half)of a large 1L tub of cool whip 95% fat free
    250 g of fat free cottage cheese
    2/3 cup of boiling water

Directions

Dissolve jello in 2/3 of a cup of boiling water, let set in fridge until firm. Once jello is set transfer to a blender. Add cottage cheese and cream cheese to blender. Blend, by pulsing and stirring, until smooth and blended. (This will take awhile as mixture is thick)Remove from blender and fold in cool whip. Transfer to a pie plate sprayed with cooking spray. Cut into 8 equal slices. Tastes just like a creamsicle. I have used different flavours of Jello too and they all turned out yummie. Lime is another of my favorites!

  • This was absolutely delicious!! I used it to make mini cheesecake tappas for a get together and they were all gone. I spooned a little of the mixture in phyllo dough cups. Everyone wanted the recipe! - 4/21/08
