Introduction

Amazingly, this is quite breadlike. Perfect for Induction level low-carb eating, and it is tasty too! The batter stores well in the fridge. You can vary the recipe by changing the spice, the extract, and/or leaving out the sweetener in order to make it savory. Amazingly, this is quite breadlike. Ingredients

    2 eggs, beaten
    1/2 t cinnamon
    1/2 t flavoring extract, like vaniila (I prefer eggnog!)
    1/4 c heavy cream
    1/8 t white stevia powder
    1 t lite olive oil or butter
    1 1/2 oz crushed bland pork rinds

Directions

Combine all ingredients except the oil. Allow to set 5 minutes. Thin with 1 T water if batter is too thick. Heat non-stick skillet with 1/2 t oil. Pour in batter and fry pancake-style, until golden brown. Lift with turner, swirl remaining oil into skillet; flip pancake over and fry other side until golden brown. Remove from skillet and serve with low-carb syrup.
