Ingredients

    1 c chopped onion
    1/2 c chopped carrot
    1 large potato, chopped
    1 tbsp. olive oil
    2 cans swanson 99% broth
    1 can pumpkin
    Brown sugar 1 tbsp.
    1 tsp. ginger
    2 tsp. cinnamon
    1/2 tsp. salt
    1/2 tsp. pepper

Directions

saute onion, carrot and potato in olive oil. Add one can broth and simmer 'til potatoes are done. remove from heat and allow to cool. once cool, puree in blender. return to pot and add can pumpkin, 2nd can broth and spices. simmer 'til heated through.
