Coconut Pineapple Rice

Introduction

A light and sweet rice that tastes great. Makes a nice pairing with curried fish or chicken or black bean patties. A light and sweet rice that tastes great. Makes a nice pairing with curried fish or chicken or black bean patties.
Number of Servings: 4

Ingredients

    2 cups Jasmine Rice (or any other long grain rice)
    1 cup Lite Coconut Milk (such as A Taste of Thai)
    1 cup water
    1 cup Dole Pineapple Tidbits in 100% Pineapple Juice
    1/4 cup shredded coconut, toasted if desired
    2-3 tbsp cilantro, chopped

Directions

Add rice to pot and rinse with warm water until water is clear. Next add 1 cup water and 1 cup of coconut milk to medium saucepan or rice cooker.

Cook about 20-25 minutes or until rice is cooked through.

Once rice is done, add the 1 cup of pineapple, shredded coconut and cilantro if desired. Toss well and serve while still warm.

Serving Size: 1/2-3/4 cup

  • Among the best rice I have ever had. I've gotten this at restaurants before and always found it too starchy- rinsing beforehand really seems to do the trick tho- it was a total crowd pleaser when I made this for my mom on mother's day! - 5/24/10
