Olive Oil, Extra Virgin, 1 tbs Ham, extra lean, 2 cup, diced Onions, raw, 1 cup, chopped Garlic, 3 cloves, chopped Water, 6 cup Tomato Sauce, 3.5 cup Beans, great northern, 3 cup Ditalini Pasta, uncooked, 8 oz salt and pepper to taste
In 5 quart saucepan, heat oil and saute ham, onion, and garlic until onion is tender, but not brown. Stir in water, tomato sauce, beans, parsley, and pepper; heat to boiling. Reduce heat and simmer, covered, 10 minutes to blend flavors. Return soup to boil. Add Ditalini and boil, stirring occasionally, 10 mintues or until Ditalini is tender. Serve with a good Italian bread and parmesan cheese (not included in nutritional info). Makes 8 1-cup servings.
