Introduction

A quick Italian flavor soup with my favorite veggies, tomatoes and zucchini. I added leftovers and frozen foods, broth. This is soon to be a new family favorite. A quick Italian flavor soup with my favorite veggies, tomatoes and zucchini. I added leftovers and frozen foods, broth. This is soon to be a new family favorite.
Number of Servings: 16

Ingredients

    1 onion, chopped
    1/2 bag of baby carrots, chopped
    1/2 celery heart/chopped
    1lb round steak, cut into bite size pieces
    2 cups potatoes
    2 cups beef broth
    1- 2 cup V8
    4 cups water
    1/2 bag of fresh spinach
    1 can diced tomatoes
    1 package of mixed zucchini

Directions

cut beef into bite size pieces and add.
chop onions, carrots, and celery for the soup. add any left overs.
chop and precook potatoes in microwave till soft, or use left-overs.
add broth and V8 or tomatoes juice and water.
add bay leaf, simmer

about 30 -45 min before serving add tomatoes and frozen zucchini mix.

* serving = 1 cup of soup for easier calculations
