Crustless spinach quiche lorraine

Introduction

I made this with whole eggs and 1% milk, but I'm sure it could be adapted to egg substitute and skim milk. Also, calorie count is based on 1/4 of a pie as a serving. Ingredients

    1 package frozen spinach, thawed and drained well
    6 slices of cooked low-sodium bacon

    4 large eggs
    1 1/2 cup milk
    seasonings to taste - nutmeg, pepper, mustard powder, herbs

    2 cups shredded swiss cheese

Directions

Preheat oven to 375 degrees

Defrost the frozen spinach (3 minutes in the microwave) and drain well. Layer on the bottom of a 9" pie pan. Crumble 6 slices of bacon over the spinach. Spread 2 cups of shredded swiss cheese over the spinach/bacon.

For the custard, whisk or blend 4 large eggs and 1 1/2 cups of milk together. Add seasonings of your choice. Pour the custard over the other ingredients in the pie pan.

Bake on the middle rack at 375 for 30-40 minutes. The top should be light brown, and a toothpick should come out clean.
