Roast Bison Enchiladas

Introduction

I had this great leftover roast bison that had been cooked in tomatoes with chiles. I figured it would make great enchiladas...so here you go! I had this great leftover roast bison that had been cooked in tomatoes with chiles. I figured it would make great enchiladas...so here you go!
Number of Servings: 4

Ingredients

    8 corn tortillas
    16 oz roast bison
    1/2 cup tomatoes w/ chiles
    1 cup enchilada sauce
    1 cup sharp cheddar, shredded
    2 cups baby spinach, shredded

Directions

Shred bison and mix with tomatoes. Dip corn tortillas in enchilada sauce. Put 1/8 of bison mix on each tortilla and roll. Place seam down in prepared pan. Pour remaining sauce over the enchiladas. Sprinkle with cheddar. Bake 20 minutes at 350 or until heated through. Serve with shredded spinach. Makes 4 servings.
