Quinoa and Kale salad

Introduction

Very nutritious! Very nutritious!
Number of Servings: 8

Ingredients

    1 cup quinoa, dry
    2 cups cooked white beans
    1/2 cup chopped carrots
    1 large onion, chopped
    2 cloves garlic, chopped
    5 cups chopped kale
    1/4 cup + 1 tbsp olive oil
    1/2 cup red wine vinegar
    1 tsp dijon mustard
    salt and pepper to taste

Directions

Rinse quinoa well and then cook in 2 cups water until all water is absorbed. Saute onions and garlic in 1 tbsp olive oil until soft. Stir in kale and saute until it is bright green. Whisk together 1/4 cup olive oil, vinegar and mustard. Stir all ingredients together and chill. Makes 8 1-cup servings.
