EmilyBrontes Salmon Patties with Lemon Sauce

Ingredients

    SALMON PATTIES
    1 14.75 oz can salmon
    1 egg
    1/2 teaspoon black pepper
    1/4 cup crushed saltine crackers
    1 tablespoon Dijon mustard
    1 tablespoon dried parsley

    LEMON SAUCE

    Juice of one lemon
    2 tablespoons Smart Balance
    1 teaspoon fresh parsley or substitute dried if necessary

Directions

In a medium bowl combine all salmon patty ingredients. Divide into 4 equal servings. Spray a non stick skillet with cooking spray. Cook patties over medium heat for 5 minutes on each side or until brown.
To prepare the lemon sauce, combine lemon juice, Smart Balance and parsley in a small saucepan. Simmer together about 5 minutes and serve over salmon patty.
