Spaghetti Carbonara With Shrimp

Ingredients

    2 TBS Olive Oil,
    4 cloves Garlic, minced
    1 medium Onions, chopped
    1 medium Green bell Pepper chopped
    1 15 oz can Mushrooms pieces & stems, drained and rinsed
    1 Hot Chili Peppers minced
    2 cups Zucchini, chopped
    1/2 cup Shrimp,
    3 cups Ronzoni, Healthy Harvest Spaghetti, cooked
    2 Eggs beaten
    3 TBS Parsley chopped
    1 tsp Basil,
    1/2 tsp Oregano, ground
    3 TBS Parmesan Cheese, grated,
    3 plum Tomatoes chopped

Directions

In a skillet sprayed with Non stick cooking spray add the olive oil. Heat on medium high, add garlic, onions, bell pepper, mushrooms, chili pepper. Cook and stir about 3-4 minutes.

Add Shrimp and zucchini to skillet and cook until zucchini is tender

Add eggs, parsley, basil, oregano and Parmesan to a medium bowl. Beat well. Set aside.

Meanwhile in separate pan, cook spaghetti until Al dente.
When Spaghetti is done, add to bowl with egg mixture and mix well until combined.

Add Spaghetti mixture to vegetables and shrimp in skillet and mix together until egg is cooked and mixture is blended. Add tomatoes, and heat until warm.

Serve hot with a green salad.

USE COMMON SENSE WHEN DECIDING ON THE SERVING SIZE.

This recipe makes about 4-5 servings.
